On such a cold rainy spring day nothing is better than a cup of warm creamy soup.. If you’ve never tried broccoli soup before you might think that it does not really sound yummy, but believe me it is one of the yummiest soups of all times..
A large broccoli floret
2 medium size potatoes
2 large onions
6 Maggi Chicken Bouillon Cubes
cinnamon, pepper, nutmeg, salt for seasoning
2 large packs of heavy cream (Nestle, KDD, Puck..) – or 4 small packs
Optional Parmesan cheese – I recommend American Heritage crushed Parmesan
cut broccoli, onions, potatoes into large chunks and put them in a big pan with the Maggi cubes and cover them with water (approximately 7 cups) and let them boil for an hour.
once all veggies become soft and easily break, blend them all together – either in a blender or using your multi-quick blades mixer.
put the soup back in the pan and add the heavy cream, seasoning and 2 large tablespoons of Parmesan cheese, let them all boil for a few minutes.
all done.. sa7tein.
serve with croutons and Parmesan cheese on top.
