Thai Chicken Curry

it’s time for the sensual, exotic taste of Thailand..this extremely rich, delicious meal is quite easy to make, all you need is chicken breasts and lots of your favorite vegetables..


2 chicken breasts sliced

a bunch of your favorite veggies, diced

coconut milk

curry paste

salt and pepper

1 cup spring onions

2 cloves of garlic

1 tablespoon shredded ginger

2 tablespoon butter

1 tablespoon salt, pepper, cinnamon, cayenne or chili pepper

Recommended veggies are:

1 cup wild mushrooms

1 cup baby corn

1 cup broccoli

2 cups colored bell pepper (green, yellow, red, orange)

1 cup green peas

1 cup carrots


in a skillet, melt the butter and stir fry the chicken with garlic, salt and pepper, cinnamon, cayenne pepper or red chili pepper.. in 10 minutes the chicken will be done, add corn, carrots, let them cook for another 5 minutes, add the rest of the veggies, let them cook for a few minutes.

dissolve 2 spoons of curry paste to 2 cans of coconut milk and add them to the chicken and veggies mix, let them boil and simmer.. don’t let them get too dry..

eat it with rice on the side..

all done.. enjoy 🙂
