Spring Salad

a light and wonderful picnic salad of pasta, spring veggies, a tasty dressing of olive oil, vinegar, garlic, basil, thyme, green herbs, and parmesan..

ready in half an hour, and contains approximately 150 calories per serving


3/4 cup olive oil

4 tablespoons red vinegar

1/3 cup dried basil, thyme leaves

1/2 cup lemon juice

2 tablespoons salt

chili pepper, black pepper, cinnamon and nutmeg (half a tablespoon each)

whisk all the ingredients above until mixture gets thick


in a large bowl add the following ingredients:

300 grams pasta (any small pasta would do)

1 cup green peas boiled

2 large carrots diced and boiled

1 cup red beans

2 cups sweetcorn

2 cups red, green, yellow (any colors available) bell pepper diced

1 hard tomato diced

half a cup of shredded parmesan cheese

* make sure all veggies are diced really small..

mix all the ingredients together.. add the dressing, let it blend in with all the veggies and pasta, refrigerate for an hour and enjoy a wonderful salad…
